It was my sister’s birthday not too long ago and so I decided to take on the task of making her birthday cake. The cake had to be quite large to serve to all of her friends, so the quanitities of ingredients are quite large but feel free to half the quantity if you want a smaller cake.

If you’ve not tried using espresso in the batter when baking with chocolate, you really, really should. The espresso works to elevate the flavours in much the same way as vanilla extract does but it doesn’t overpower the mixture at all or taste like a coffee cake.

I decided to do something a little different to decorate this cake. To get the swirled effect on the outside, all I did was coat the cake with the frosting, refrigerate it slightly, and then I used the top part of a spoon to make an indented swirl. It looks much more complicated than it actually is and makes the cake a little more birthday-like!

So, if you have an occasion coming up I would definitely recommend that you try this cake out! It is moist, chocolaty and will please any guest.

Chocolate  Cake

  • 250g plain flour
  • 250g caster sugar
  • 100g cocoa  powder
  • 2 teaspoons baking powder
  • 1½ teaspoons bicarbonate of soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • 250ml  milk
  • 125ml vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 250ml boiling water

Preheat oven to 180º C. Prepare two 9-inch cake pans by buttering and lightly flouring.

For the  cake:

  • Add flour, sugar, cocoa, baking powder, bicarbonate of sodia , salt and espresso powder to a large bowl or the bowl  of a stand mixer. Whisk through to combine or, using your paddle attachment,  stir through flour mixture until combined well.
  • Add milk, vegetable oil,  eggs, and vanilla to flour mixture and mix together on medium speed until well  combined. Reduce speed and carefully add boiling water to the cake batter. Beat  on high speed for about 1 minute to add air to the batter.
  • Distribute cake batter  evenly between the two prepared cake pans. Bake for 30-35 minutes, until a  toothpick or cake tester inserted in the center comes out clean.
  • Remove from the oven and  allow to cool for about 10 minutes, remove from the pan and cool  completely.
  • Frost with buttercream frosting (recipe for this is below)

Chocolate Buttercream Frosting

  • 340g butter,  softened
  • 130g cocoa powder
  • 640g icing sugar
  • 250ml milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon espresso  powder
  1. Add cocoa to a large bowl  or bowl of stand mixer. Whisk through to remove any lumps.
  2. Cream together butter and  cocoa powder until well-combined.
  3. Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk.  After each addition has been combined, turn mixer onto a high speed for about a  minute. Repeat until all the sugar and milk have been added.
  4. Add vanilla extract and  espresso powder and combine well.
  5. If frosting appears too  dry, add more milk, a tablespoon at a time until it reaches the right  consistency. If it appears to wet and does not hold its form, add more icing sugar, a tablespoon at a time until it reaches the right  consistency.
